Mountain Man Dutch Oven Breakfast

This is my the last post of my 2013 campfire series. All others have been desserts, but here is a hearty breakfast! It would actually be a great meal any time of day!

Mountain Man Breakfast (in a dutch oven)

1 lb ground sausage
a dozen eggs
3-4 small potatoes or hash browns
cheese

Directions We cooked the potatoes in foil over the coals the night before. We only baked them long enough to get them soft to cut in the morning. My husband is an early riser, so he prepped this while we were still sleeping! Line the dutch oven with foil and spray with some cooking spray. Cook the ground sausage in the bottom of the (open) dutch oven over the fire. No need to drain the grease. While the sausage is cooking beat the eggs in a separate bowl and chop the potatoes. Put the potatoes on the sausage and the egg mixture on top of that. Cover with desired amount of cheese. Place lid on dutch oven, cover with coals, and bake for 25-45 minutes depending on your heat. We pulled the lid at about the 25 minute mark to see how cooked the eggs were and then left it on longer. We were in Colorado where it was dry and we got better coals which cooked faster. The previous summer we were in the south where it was very humid and it took much longer to cook this.

I love how this recipe can be adapted to different varieties of sausage and potatoes. We've done it several times with hash browns (we had to make it the day after we went to the store because our RV doesn't have a freezer), but we much prefer it with actual potatoes. As I've said with all the recipes in my series...things just taste better baked in the dutch oven!!

  1. I made something like this at home, it was eggs baked in the oven..I used Spanish, peppers, omion, and bacon. I guess it was kind of a quiche. I was nervous but everybody ate the heck out of it. I'd definitely try this one.
    I do a lot of food that I have to stand over and cook when we camp- I like your Dutch oven recipes because I could eat when everyone else does; and less babysitting the food :)

  13. I love this kind of food and it actually looks like Tortilla EspaƱola, is a typical Spanish food and my hubby used to make it with sausages!
