When I had a lot of leftover Easter ham I was searching for a low carb recipe that I could use it in. I came across this Creamy Ham & “Potato” recipe from (my favorite) Linda’s Low Carb site.

I adjusted the recipe a little bit and call it Ham Sham Spud Leftover Ham Casserole. It might be a sham of a recipe, but it is hearty and tastes great!

Ham reminds me of the holidays when I was growing up.

I do not remember eating a lot of ham, other than at Christmas and Easter. We certainly did not eat it loaded with cheese like this. 

I grew up out in the west, so our meals were high in vegetables and fruit and low in meat. I must say that I have adapted to the meat and potatoes of the Midwest just fine, although I still eat a lot of produce.

Ham Sham Spud Leftover Ham Casserole Recipe

The recipe calls for fresh or frozen cauliflower, sour cream, heavy cream, cream cheese, ham, and cheese. Yes, that is a lot of creamy goodness!

We are huge cheese fans. Therefore, I used four cups when I made it, but you can easily cut it back to two cups.

This recipe is very similar to the Mockafoni & Cheese recipe I posted but it tastes so different! This is very yummy!

This recipe is perfect to make using ham leftovers from holiday meals. Sometimes I buy a ham just for this recipe. 

It is good comfort food. It is a great way to get your family to eat cauliflower.

They will think they are eating potatoes and also ask you for seconds. Just do no tell them that it is cauliflower until after the meal.

Ham Sham Spud Leftover Ham Casserole

Check out this low-carb ham and faux potato casserole. People won't realize that is it not potato.

Additional Time 15 minutes
Total Time 1 hour 15 minutes

Ingredients

  • 2 pounds frozen or fresh cauliflower
  • 8 ounces cream cheese
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 2 cups of diced leftover ham
  • 2-4 cups shredded sharp cheddar cheese
  • pepper

Instructions

  1. Cook the cauliflower and drain it well.
  2. Chop the cauliflower up a little bit.
  3. Grease a 9x12 casserole dish.
  4. Mix 1/2 of the cheese, softened cream cheese, and the heavy cream in the dish until well combined
  5. Mix in the ham and then the cauliflower.
  6. Cover with the remaining cheese.
  7. Bake at 350º for 35-45 minutes.
