Fresh Cranberry Salsa

It's cranberry season, so it's time to resurrect one of my favorite recipes. I originally posted it here. If you are a cranberry fan, then it's a MUST try. If you aren't a big fan but like fruit & salsa, then try it out! I had planned on sharing some of this batch with a friend, but I could not stop eating it so I'll have to make another. Serve this at your next holiday party and get rave reviews!!
 Fresh Cranberry Salsa

12 oz package fresh cranberries
1/4 C green onion, chopped
1/4 C cilantro, chopped
1 small jalapeno pepper, optional
1 C sugar
1/4 t cumin
2 T juice from lime or lemon
dash salt

I chop the cranberries in the food processor and the rest by hand. Put everything in the bowl and then stir. It's good right away, but even better the next day. I have jalapeno listed as optional, but I recommend at least a little bit. I am sitting here eating this as I type up the post!

Annual Family Holiday Craft Day

Yesterday was our annual family holiday craft day with extended family. The kids made ornaments, cookies, & gingerbread houses.
My kiddos are very proud of their creations.

While I am gingerbread house fan, I've gotten lazy and buy the pre-cooked village set that comes with icing & candy. It's the perfect size and each kid gets to do their own.
The kids have been picking off the candy & eating it, so they aren't as pretty today!

Mint Dirt Pie

Every year I make a dirt pie for Thanksgiving. This year my husband requested mint and I came up with this variation of my original recipe.
Mint Dirt Pie (this is the ingredients for 2 pies)

2 Oreo Pie Crusts
2 (4 oz) boxes of Chocolate Instant Pudding
2 cups of milk
2 tubs of (softened) Cool Whip
1 package of Oreo or similar sandwich cookies
1 package of Thin Mint Girl Scout or Grasshopper cookies
1 bag of Andes Mint Bits
Optional: Box of Junior Mints

Mix the pudding & milk with a whisk, fold in the cool whip. Crush the sandwich & mint cookies (I use my food processor) to make dirt. Mix the cookie dirt & mint bits into the pudding mixture and pour into the pie crusts. Refrigerate for a few hours. I put a few Junior Mints on top of each slice as it was served. My dirt pie is always the first to disappear!

Egg-less Brownies

The other day I tasted some egg-less brownies that a friend made with diet coke. They were very cake-like but with some chewiness. We had a Sprite on hand so we decided to try it out. All you need is 2 ingredients: a can of soda and a brownie mix.
Mix them up and bake according to the package directions. We used half a can and put ours in a 9x13, so they were a little more dense but still chewy. Some people might not like the texture, but I think it's a good alternative for people that have to avoid egg. If you want it more fluffy, use the entire can.

I Am Thankful For My Daughter!
My daughter *LOVES* to draw so I asked her to draw a picture of herself for me to copy for this bento. Her name is Dori, which I have spelled out in cookies. (kind of hard to see against the carrots!)
11/15: I'm Thankful for Dori- Nutella Sandwich topped with my daughter made out of tortilla, Provolone, nori, & edible marker, craisins, carrots, and TJ's Alphabet Cinnamon Cookies that spell DORI. We iced the cookies & added sprinkles cause that's the way my daughter rolls! I adore this girl! She is smart, silly, & sassy! Just like me! LOL!

Top 5 Comment Tips for Bloggers

Do you love getting comments? Do you wish more people left comments? Here are some easy steps that bloggers can take to increase the amount of comments they get. While a few of these are aimed at bloggers on the Blogger (blogspot) platform, most of these are helpful for all Bloggers.
1. Turn OFF Word Verification Many people use word verification to cut out spam. It's not necessary. Quite often I do not leave a comment at all on a blog with word verification on because it's hard to decipher. If I do try to leave a comment and don't get the words correct on the first try then I just click away from that blog. Don't make it hard for people to leave comments! Turn off word verification and turn on comment moderation. Comment moderation gives you full control over which comments to publish. Tutorial on Blogger comment settings can be found here.
2. Leave Comments People will want to come see your blog if you leave them comments. Invite them to your blog or tell them something that might interest them. ie: I love this pumpkin recipe. Come check out the recipe I just posted for pumpkin cheesecake. You can even leave your blog/post URL in the comments.

3. Respond to Comments When people leave comments for you, respond to them. You can do this via email or responding to the comment itself. If you have your settings such that you get emailed when comments are published then you can just click reply to comment via email if they have their email enabled on their profile*. You can also go to the actual comment and click the reply link and respond to the comment. If they leave a comment inviting you to their blog, then go visit and leave a comment. *I'm getting feedback about bloggers who are No-Reply Bloggers. Please change your settings so that people can reply to your comments via email. Instructions here.

4. Ask for Comments Don't be shy! Ask for comments. You can even post a question at the end of your post to facilitate comments. ie: What are your favorite holiday traditions?

5. Follow The more exposure your blog has, the more readers you get, which means the potential for comments goes up. Not only should you follow someone's blog, but follow them via Twitter, Facebook, Pinterest, or other ways they have listed on their blog. Leave them a comment letting them know you are a new follower. ie: I am now following you on Facebook & Twitter. Then interact with them beyond the blog.
