Mega Mint Brownies
Brownie Mix + egg & oil per directions
Chocolate Instant Pudding Mix
Mint Oreos
Andes Mint Baking Chips (I used the regular & peppermint varieties)
Chocolate Chips
Peppermint Extract
Frosting (I used some I had on hand)
Candy Canes
Break up about 1/2 the package of Oreos and line the bottom of a baking dish. Mix the brownie mix according to the directions. Mix in the box of pudding. Add the baking chips (I used a 1/2 bag of each). Add 1/8-1/4 teaspoon of peppermint extract. Pour the (thick) batter over the broken Oreos. It will try to push them out to the side and I just push them back. See photo below. Bake according to the thick bake directions on the box.
After cooling I topped with crushed candy cane and drizzled some green icing on top. They turned out really thick and moist. My son took these to youth group tonight and they were devoured in a few minutes.

Wow! I'd love these. Mint and brownies...delish!
