Baileys Irish Cream Mint Chocolate Cupcakes

Today is teacher conferences and the PTA provides a meal for the teachers. I recently saw this recipe at Family Fresh Meals for fabulous looking cupcakes, and decided to make my own version for the teachers.
Baileys Irish Cream Mint Chocolate Cupcakes
Cupcakes: I used a Devil's Food cake mix and added a little peppermint extract and baked.
Icing: 8 ounces of cream cheese, 1 stick of butter, 2 cups of powdered sugar, and approximately 5 ounces of Bailey's Irish Cream. I used the mint chocolate variety. I drizzled some thinner green icing on top.

Several teachers saw me carry them into the school and were very excited. They promised to just have 1 before meeting with parents! LOL!
