I found a new recipe that I wanted to try. I altered it slightly, but I think it turned out well. It bakes for nearly 3 hours, so plan ahead.
Cream of Chicken & Mushroom Soup
First wrap each chicken with a piece of bacon and put in a casserole dish. Mix the soup & sour cream and spread it over the top of the chicken. Bake uncovered at 275 for 2.75 to 3 hours. I use Cream of Chicken & Mushroom as it has a lower carb content. It did turn out a little salty so next time I'll use a lower sodium version, even if it means using 1 can of cream of chicken and one can of cream of mushroom.
We served it over green beans. YUM!
