We've had a very nice & relaxing Thanksgiving. My sister & her family plus a friend of mine came over for the Thanksgiving meal.
Here is my son & I.
I made a delicious Pumpkin Pecan Upside Down Cake in an iron skillet for dessert.
We had a dessert pot luck with friends in the evening and I made gourmet Chocolate Pumpkin Cupcakes with Cream Cheese Frosting.
Yesterday was our annual Family Fun Craft Day with my sis & family. Instead of making the gingerbread houses I bought a pre-baked village and each kid got to decorate their own little house. I will get the same set to use for our Girl Scout Christmas party.
Today has been lazy with sleeping in, leftovers, and watching the Illini game (they lost!) at a friend's house. Now we wait to see if they get a bowl bid. We have a group of friends coming over to watch the Bears game tomorrow and will be serving King Ranch Turkey (enchilada casserole). I still have enough leftover turkey to freeze!

Thankgiving Turkey Pop Tarts

Yesterday was my daughter's snack day at school. I had the kids create Turkey Pop Tarts.

Ingredients: Pumpkin Pie Pop Tarts, candy corn, icing, candy for eyes & wattles. I used black round sprinkles for the eyes and cut up pieces of candy silly bands for the wattles.
Cut part of the pop tart off so that it's square. Cut a round piece out of the cut off piece. Use icing to put the head on the turkey and run a line along the upper edges where the feathers go. I let the kids put the remainder of the turkey together. I had a sample put on the Smart Board projector.

Magic Dolphin Bento

Recently when my daughter was having a hard time falling asleep one of her big brothers told her to think of the 'Magic Dolphin'. He told her that Magic Dolphin took away bad dreams and replaced them with happy thoughts. It seemed to work for her when she was having a hard time the other night. She & I just chanted 'Magic Dolphin' together over and over until she fell asleep. I asked my son what the magic dolphin was and he said he just made it up. Clever boy! I think I'll buy her a stuffed animal dolphin for her birthday!

Since Magic Dolphin is a hero around here, I decided to make a Magic Dolphin bento today.
11/21: Magic Dolphin- White egg sheet dolphin (brushed with blue food coloring), mac & cheese, peas, apples, and MAGIC DOLPHIN cut out of Sour Punch Candy. I laid the letters on Fruit by the Foot so that they didn't move around during transport.

Fresh Cranberry Relish

I posted this recipe 3 years ago, but I decided to post it again since it's time to make it for Thanksgiving!!

 Fresh Cranberry Relish Chutney

1 bag fresh cranberries (12 oz)
2 apples (I usually use a fuji & granny smith)
1 orange or tangerine, peeled
1 small can of mandarin oranges, drained
1 can pineapple chunks, drained (or equal amount of fresh pineapple)
1/2 - 1 cup sugar
optional: finely chopped pecans

This recipe should be made ahead of time. For Thanksgiving I will put this together either Monday or Tuesday sometime. It just tastes better when you let it sit for a few days.
Chop all ingredients. I just use my food processor and chop a little at time. I then dump it all ingredients into my Pampered Chef Classic Batter Bowl and stir. Cover tightly and store in the fridge. I go in and stir once a day. The recipe makes about 7-8 cups of relish, so I put some in glass jars and pass it on to friends or neighbors. It's wonderful with Thanksgiving dinner or by itself. I usually eat it for breakfast for a few days. Fresh cranberry season is short, so I will only make 2 batches a year...once at Thanksgiving and once at Christmas. Make this for Thanksgiving this year and you will get so many compliments!!

I chopped everything (in the food processor) separately and layered it for you to see.
Here it is all stirred up! Make it at least 48 hrs in advance!

Sousa Man Bento

My son is a member of the Marching Illini Sousaphone Line and their logo is Sousa Man.
Since tomorrow is the last home game of the season I thought I'd make a Sousa Man bento.
11/18: Sousa Man- man out of blue egg sheet & sousaphone out of Provalone & Babybel for the bell of the horn (with black egg sheet for hole in bell), peas, apple, leftover penne pasta, cheddar cheese block I for Illinois, & football pick.
We are going to FREEZE at tomorrow's game, but unlike last week I will be prepared with LOTS of warm layers! Sad that the season is over, although the band should travel with the team to their bowl game. I'll just have to watch them perform on TV!!

Can you figure this bento out? Updated: Candy Girl figured out that it was No Puffin (Smoking). Today is the Great American Smoke Out, so I thought this bento was fitting! I got this idea from some magnets/stickers we bought in Alaska last year.

Ladybug Egg Sheet Bento

As I said yesterday I am loving egg sheets. I did the red one myself.
11/16: Ladybug Egg Sheet- sausage & cheese bites, peas, apple, panda cookies, and 2 ladybugs made from black & red egg sheet. I punched the holes in the red to make it look like spots!

I got this recipe from my BIL. It never had a name so we call it Uncle Todd Pasta. Not low-carb at all, but our kids like us to make it for them. Makes a lot!
Uncle Todd Pasta

Whole Wheat Penne Pasta
Chicken Breast
Frozen Peas
Alfredo Sauce
S/P to taste

Cook the pasta according to directions. Cut the chicken into bite size pieces and cook them in a large frying pan. When they are nearly done put the peas in and let them both cook for a few minutes. Add alfredo, the (drained) pasta, and salt & pepper. Stir for a few minutes over low heat and serve.

Egg Sheet Onigiri Bento

This Friday's theme for Bento of the Week is egg sheets. I've wanted to try egg sheets but I was worried that it was difficult. DH is an expert at making breakfast so I asked for his help in making the egg sheet. We followed this tutorial step by step and and it worked! I think that we will be making lots of egg sheets in the future. I wanted blue egg sheet but when we added blue food coloring to the egg (yellow) it made greenish-blue. I guess we will just need to use egg whites for certain colors. We ended up putting a few drops of black food coloring into the mixture so that I could use it as a substitute for nori. Our daughter tasted the egg sheet right away and said she LOVED IT! Bonus!

Here is our egg sheet cooking. Next time we will let the egg mixture sit a little bit before we strain it so there are no bubbles, although the sheet was still usable with the bubbles.
Here is the finished product. Kind of looks like a burnt tortilla. LOL!
Here is the first bento I made with it. Egg Sheet Onigiri ends up meeting this week's and next week's themes for Bento of the Week.
