Mexican Squash Casserole
Ingredients:
* 3 yellow squash (I used 1 acorn squash)
* 1 can Ro-Tel tomatoes (I used mild)
* 1 pound ground beef cooked with 1/2 chopped onion and drained
* 1 package of taco seasoning
* 2 cups grated cheddar cheese (of course, I used more!)
Directions:
Brown ground beef with chopped onion, drain grease. Return skillet to heat and add taco seasoning and ro-tel tomatoes.
Slice squash into thin rounds. In a casserole dish, layer squash, then meat, then cheese.

ReplyDeleteWe are thinking of putting a garden in. It would need to be a raised bed due to lines running underground. We have a major bunny population here, so a screened enclosure might be best.

I just made this for dinner. I couldn't find ro-tel tomatoes, so just used regular whole tomatoes that I chunked up. It was delicious-the taco seasoning really gives it flavor and my family did not know they were eating all those vegetables!
