Sorry I haven't posted much in the past 2 weeks. I am not going to blame it on being busy...just being lazy! LOL!

Sorry I haven't posted in a few days. I've been super busy and not home much. I know I haven't been consistent with posting a recipe each Monday, but I have one for you today!

I got this recipe off Deliciously Thin. It's super simple and really yummy! My family LOVED it and wants me to make it more often!

Hobo Dinner

Ground Beef
Lawry's Seasoning Salt
Montreal Steak Seasoning
Optional: Cheese & Potato

You've got to get big pieces of foil for this. I use 2 layers of foil. Make big patties with the meat. My family likes it if I put some cheese in the middle. Put it on the foil, sprinkle with both seasonings, put a big slice of onion on top, and wrap up tightly. If you are going to add the potato you can put a slice of it below the onion. Put some seasonings on the potato & onion too if you want. Omit the potato to keep the carbs low! You can even put a little bit of butter on top. Make sure the foil is wrapped tight. Put them in a 375 degree oven for about an hour. D-lish!

Date Night

Last night DH & I did something we rarely do~ we went out on a date. The boys are at a retreat this weekend and our daughter went to Parent's Night Out at Little Gym, so we decided to have some fun. We went out to dinner at Ruby Tuesday. We tried some other restaurants but they had a long wait. I was still able to make carb smart choices and got the sirloin with broccoli & blue cheese cole slaw. All of it was soooo D~Lish! I will definitely go back and order that again. It was VERY cold yesterday, so it was nice to be in a warm place and to hold hands. After dinner we went bowling. It was a lot of fun. We acted like we were newly dating and were being silly. I won the first game, but didn't do so well the 2nd game. See our awesome scores? NOT!We finished up bowling and it was time to head back to Little Gym. We got to watch the kids all playing for a few minutes before it was time to go home. Dori just *LOVES* Little Gym and was beaming from ear to ear. Especially with Daddy being able to watch. We read several stories to Dori before putting her to bed and then we watched Couples Retreat on my laptop in bed. We didn't laugh as much as I thought we would, but it was still funny. We will be repeating some of the lines from it for a while!

Then we got to sleep in this morning. We are actually still laying in bed now! Not sure how often we will do it, but we are definitely going to date more often!! I wasn't sure we knew how to act on a date, but the idea of bowling was a great idea!

Low Carbs

I've been on the low carb diet for 3 months now and it's going well. Not sure I've lost much weight lately, but I've been blowing the diet...especially on weekends. I find that when I do my acid reflux kicks in. Last night I had homemade chicken salad and served it in half of an avocado, which I got the idea from Deliciously Thin. I used my own chicken salad recipe though. It was pretty good, but I do miss bread & tortilla chips with this chicken salad. I'll put the recipe below cause I can't remember if I posted it before.So with Thanksgiving coming up, I'd like to find some low-carb alternative recipes. I *LOVE* to overeat on Thanksgiving~ especially on mashed potatoes & rolls. If I do that this year I will be in a carb coma. Anyone have any low-carb Thanksgiving alternatives?

Chicken Salad

Chicken breast (I use IQF)
Hard Boiled Egg
Mayo (whatever variety)
Optional: Apples, Grapes, Pecans

Boil & shred the chicken. Chop up egg, apple, grapes, & pecans and add it to the chicken. Add in mayo, mustard, & salt to taste. I love this with whole wheat bread or corn tortilla chips, but with lo-carbs I eat it on lettuce or with celery or avocado.

Kitchen Light

I ordered the light for our kitchen 2.5 months ago. I guess they had to make it from scratch. It arrived yesterday and Eric installed it right away. It makes a big difference in the kitchen (we also put brighter light bulbs in the fan in the dining room), but it doesn't illuminate the whole room. That's fine because we have the recessed lights in the sofets (which need updating!) which illuminate the counters. I am glad we went with white on the ceilings because this fixture really casts light off the ceiling. Now it's time to get the stained glass window panel ordered!

Each year I get my daughter a charm on her adoption anniversary. We have those charms set aside in a special location and when she's older we will purchase a bracelet for all the charms to go on. Her first charm was a heart that we had engraved. In the years since, we've gathered a lady bug and a dragonfly. With her 4th adoption anniversary approaching I started to search online for a charm for this year. That is when I came across the Charm Factory.
