We had a great weekend! Saturday was the wedding & celebration of 2 good friends of ours. We saw it coming way back when the started to become special friends. Both are such nice people and deserve this new love & happiness in their life. It was a beautiful ceremony and the reception/party afterward was A LOT of fun!
Several of us brought side dishes for the meal. I did a new recipe and it was a hit. It disappeared quickly! Here it is~
Broccoli Corn Bread Casserole
1 stick of butter
1 pkg (10 oz) frozen chopped broccoli, thawed & drained (I chopped it slightly in the food processor)
1/2 c. finely chopped onion
4 large eggs, beaten
6 oz. lo-fat small curd cottage cheese
1 can creamed corn
1/2 teaspoon salt
1 pkg (8.5 oz) corn muffin mix
Spray 9x13 backing pan and preheat oven to 400 degrees
melt butter in microwave
stir & mix in all ingredients (except muffin mix)
stir in muffin mix
pour in pan and bake for 25 mins
I doubled it and backed in a larger pan for 40 mins. D-lish!
Yesterday was my sister's bday so I made a carrot cake (for the first time!) The cake wasn't as moist as I'd like, so I will try a different recipe next time. I was very surprised by how easy it was. Sorry...no pics of either!

ReplyDeleteI am so glad to get this recipe...And it was so much fun meeting you! Wish you lived close by, we could be really close buds...guess I'll have to settle for a long distance relationship. I want to come back up sometime when things are not so hectic....to visit with Claire and maybe we could do a power walk...then eat dessert! And BTW, I am impressed that you sew. I wish I knew how...maybe I'll take sewing lessons. Your family is adorable as are you!!
