Tex-Mex (Chicken) Corn Chowder
1 can corn (drained)
1 can creamed corn
1 can Mexican rotel
1 can black beans (rinsed)
1/2 cup chicken broth
1/2 cup or so of water
optional: chopped/shredded chicken
Mix all ingredients, heat, and serve! It's great with tortilla strips or even shreadded cheese. I tripled the recipe, subbed a big can of diced tomatoes for 2 rotel and used 2 cups chicken broth and 1 cup water instead and it was gobbled up!!
