Make Something Monday: Fresh Pumpkin Cookies
Go Graham Go & Jolly Mom host Make Something Monday. I made fresh pumpkin cookies. I added the icing too soon on the first batch and it was thin, so I waited for the later batches to cool a little.
Fresh Pumpkin Cookies
3/4 cup softened butter
1 1/2 cups packed brown sugar
1 cup of fresh cooked pumpkin (I steamed and mashed a pie pumpkin)
2 eggs
1 teaspoon vanilla
2 cups flour
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1 teaspoon baking powder
1/2 teaspoon baking soda
Beat the butter & sugar together until fluffy. Add the pumpkin, eggs, and vanilla and beat til well mixed. In a different bowl mix all the dry ingredients. Gradually add the dry ingredients to wet mixture and beat. Drop spoonfuls of cookie mixtures onto a cookie sheet very lightly greased. Bake at 375 degrees for 10-15 mins or until nicely browned. Cool on a wire rack.
While cookies are baking make the icing. Melt 6 tablespoons of butter, add 2 cups of powdered sugar, 1/2 teaspoon vanilla, and about 1/8 cup of milk. Whisk til smooth. Spoon on top of cookies after they have cooled a little bit.

That is a bit different than the recipe I use but they look just as yummy.
