Holiday Recipe Series: Baked Sweet Potatoes and Apples
Each Thursday for the rest of the year I will be a featured blogger over at The Mom Buzz with some of my favorite holiday recipes. The next three weeks will feature easy, but yummy Thanksgiving recipes. After that I will share some of my favorite cookie recipes that I make.
Baked Sweet Potatoes and Apples
2-3 Sweet Potatoes
2-3 Granny Smith Apples
1/2 cup Apple Cider or Juice
1/4 cup packed Brown Sugar
3/4 teaspoon Cinnamon
1/4 teaspoon Ginger Powder
1/2 teaspoon Nutmeg
1/4 teaspoon Salt
1 tablespoon melted Butter
Peel sweet potatoes and cut into 1/4-1/2 inch thick slices
Core apples and cut into 1/2 inch thick slices
Toss all ingredients together in a large bowl and then transfer into a (glass) baking dish.
I try to arrange and alternate the slices to make it look pretty!
Cover with foil and bake @ 350 degrees for 40-50 mins or until tender.
You can drain off any remaining juices and serve.
I love the taste and smell of this dish. It's easy to make and you really can't mess it up. I've even made it with orange juice instead of apple and it was just as yummy.
