Catching up!
Subbing in the 4s class went well this morning. I was so thankful to have helper parents there to rely on. Of course 4 yr olds will tell you if you aren't doing it right, but no one seemed to be upset or out of sorts. I'll be happy to sub again. Dori wants me to be the teacher in her class. She cried when I left her class this morning. 3rd time in a row, but they say she calms down pretty quickly. When she walked by my class on her way to the playground today, she just said, "Hi Mom!" Glad to know that she does well in the class.
Yesterday I spent a few hours on our office. Do you have one of those rooms at home that gets messy very quickly and everything seems to get dump in there? We have a few closets like that, but the office is like that too. With me spending most of my computing time on this laptop instead of on my Mac down there, the room really gets neglected. The kids mostly go in there. On top of cleaning up the room, I updated the checkbook. Today is payday, so I won't freak out that we have no money! I did discover a charge that should not be on our CC and after some persistence, got credited for the entire amount. It was for a domain name that I never used anymore (one of my pie in the sky biz ideas...) and I did not renew it. In fact, I had the settings so that it would NOT automatically renew, but it did. They weren't going to credit me the entire amount, but I escalated it and it was taken care of. YEA for me! Of course it was one of those things I got a great deal on when I signed up, but the renewal was really high! I might not have noticed it on my CC if it were the original amount. Anyway, don't forget to check your CC for charges you didn't use.
The rest of the day was spent doing some networking and a little of this and that. We had Beef Satay Patties for dinner. They are SOOO yummy. Here is the original recipe, but I've adapted it a little. (Once again I am estimating on ingredients!...sorry Michelle!)
Beef Satay Patties
~1# of lean ground beef
1 T corn meal
1.5 teaspoons sesame oil
3 T soy sauce
1 clove garlic (or garlic powder)
1.5 teaspoons ginger (or ginger powder)
just over 1/2 cup of peanut butter
1.5 teaspoons sugar
Mix all ingredients together and form into large meatballs/small patties. I bake them at 350 degrees for about 15-18 mins. I put them on a broiler pan so any fat can drip down. We served with white rice. YUM! I took this to the digi scrapping class I taught in July and it was a big hit! I think dinner tonight will be 'Chicken Spaghetti'.
